The last two soup attempts were vegetarian carrot soup & vegan corn chowder. They were pretty bad. I should probably taste the soup while it’s cooking, even if it’s going to be blended later… What soup recipes do you like?

We’re pretty much trying to starve it to death.

So! Broccoli is allowed on the menu. Instead of chopping it up and blanching it and then dressing it with lemon juice + olive oil, I did this:

Trimmed off the hard part on the stem

Cut it in quarters, like tall trees

Heated olive oil in a pan & cooked them dry, flipping occasionally

Put way too much tamari (fancy soy sauce) & furikake (seaweed + sesame seeds + msg) on top

It was surprisingly good (and too salty)! Which is why I had to blog about it! The stem part of the broccoli actually tasted sweet! I’m not sure if it’s because the broccoli was organic or if it’s because I’ve been drinking water with lemon in it for most of the day.

Addendum: Unlike french fries or cake, there seems to be a limit to how much broccoli tastes good at one sitting.

Steel-cut oats are the best! They’re much less mushy and much more nutty than instant or rolled oats. I usually cook them using Alton Brown’s recipe, but it takes 30-40 minutes.

This Overnight Oatmeal recipe from Apartment Therapy is much simpler though. You toast 1 part oatmeal in some butter, then add 3-4 parts water (depending on how soupy you like your oatmeal). Bring to a boil, then turn off the heat and cover. The next morning, just bring the oatmeal back to a simmer and it’s ready! It tastes pretty much the same as cooking oatmeal on the stove for 40 minutes — tasty!

I usually add cinnamon, brown sugar, walnuts, dried cranberries & soymilk to my oatmeal afterward. But it’s really good plain too.

And if you like your oatmeal raw, try this recipe from Whole Foods. It’s basicallly soaking 1 part of rolled oats in 1 part of milk overnight in the refrigerator.

Tom Yum Gai is the best! It’s a Thai chicken (and sometimes seafood) hot and sour soup. It is stronger than chicken noodle soup and will help you feel better from any head cold.

Yesterday afternoon I had resigned myself to huddling under the blankets in bed, when Lunchbox came home and ordered some Tom Yum Gai for me. After drinking the soup, I was able to shuffle around and made some ginger tea and felt a lot better. I’m still a little sick today, but much more mobile.

Slice some fresh ginger & boil it for a couple minutes.

Add honey, lemon & cayenne to taste.

Drink, wince, feel warm.
